WINE TASTING NOTES:
The 2015 Brut Reserve has glorious scents of flinty green apple and lime, sweet honey, and rich butter-oat biscuits. The creamy palate is complemented by a delicate mousse and tiny persistent bubbles.
VITICULTURE:
The Pinot Noir grapes grow in the Elgin region where they perform well in the cool climate and iron-rich soils of ancient sandstone, silica quartz and acidic Bokkeveld shale. The Chardonnay, from Boskloof, grows in Koffieklip and gravel soil and is exposed to cool Atlantic air. As both of the cultivars grow in cool climates, the berries can ripen evenly and develop their flavours, while retaining natural acidity. To ensure the quality of the grapes, we harvested at daybreak, after which the grapes were transported to our cellar in Stellenbosch in cooled trucks.
VINIFICATION:
In the cellar, we gently pressed the bunches and left the juice to settle overnight to ferment. Fermentation mostly took place in stainless steel tanks, but to add to the characteristics of the Black Series, we fermented some of the juice in old wooden barrels. After blending the different batches, the wine was aged on the lees before we prepared it for secondary fermentation in bottles according to the Cap Classique method.
MATURATION:
For our 2015 Brut Reserve, the wine was aged on the lees for seven years before we bottled it. We released it six months after it was bottled.
