WINE TASTING NOTES

The nose is enticing with aromas of red currant, raspberry, strawberries and cream. These primary fruit notes are complemented by a subtle hint of fresh bread dough, indicative of its extended ageing on the lees. A delicate walnut nuance adds an intriguing complexity to the aromatic profile. The palate showcases pink lady apples add a crisp, juicy character, while the citric acidity provides a zesty uplift, enhancing the freshness of the fruit.

TERROIR

For this series the Pinot Noir grapes are grown in Elgin and Stellebosch, while the Chardonnay is grown on our Boskloof farm in Agulhas. Elgin is well-known for having a cool climate where the vines grow in sandstone soils with silica quartz fragments and acidic Bokkeveld shales rich in iron. The Stellenbosch vineyards display typical decomposed granite soils, while the Chardonnay comes from our Boskloof farm where the Koffieklip and gravel soils dominate. The cool Atlantic breeze from our Boskloof farm contributes to the fresh, minerality of this Rose Cap Classique . To ensure that our wines show excellent characteristics we identify the different sections of the Pinot Noir and Chardonnay blocks that we will harvest at different times. We harvest the grapes as early as possible in the mornings in small lug boxes and then transport the bunches in cooled trucks to our cellar.

VINIFICATION

At the cellar, grapes are gently pressed, and the juice settles overnight before fermentation begins, primarily in stainless steel tanks, with some in wooden barrels to enhance the Black Series Rosé's complexity. Crafted in small batches for exceptional quality, the wine is blended and aged on the lees before undergoing secondary fermentation in bottles using the Methode Cap Classique method. It then matures on its lees for five years, with disgorgement timing carefully assessed monthly. After disgorgement, the wine is stored for at least six months before release, ensuring its refined character.

FOOD PAIRING

While this wine is a perfect match to bruschetta with goats cheese and berry compote, walnut and pear salad, and sushi, it can also be enjoyed on its own.
